Removeing an Exchange 2003 server from a mixed 2007/2003 environme

We have two offices, one with an exchange 2003 server and one with an
exchange 2007 server and an old exchange 2003 server that does not contain
any mailboxes. I want to remove the old exchange 2003 server however all
email betwen the offices flows through it. I do have a connector setup that
should route email directly between exchange 2007 and the exchange 2003 in
the other office. Is there a KB article to describes how to remove an
exchange 2003 server from a mixed environment?

This says it applies to the "first" server, but it is a good checklist for
any server because the things you need to check can be moved between
servers.
